Power Greens & Winter Fruit Salad

We love salads at our house and we always keep a good mix of greens on hand to make them easy to put together. Our new favorite ready-to-eat blend is the new organic Power Greens mix from Earthbound Farm. It’s a tasty blend of spinach, baby kale, and Swiss chard and it’s packed with vitamins and minerals. Add in-season fruit to these luscious greens and toss in a few nuts or seeds for a nutrient-rich addition to any meal, or as a meal in itself!

Earthbound Farm Power Greens
1 apple cored and diced into bite-sized pieces
1 pear cored and diced into bite-sized pieces
1/2 cup cashews
1/4 cup dried cranberries

Lemon-Poppy Seed Dressing:
2 TBL diced onion
2 TBL agave nectar
juice of 2 lemons (3-4 TBL)
1 TBL Dijon mustard
1 TBL poppy seeds
1/2 teaspoon salt
2/3 cup olive oil

Place all dressing ingredients in blender or small food processor and blend well.

In a large bowl combine salad ingredients and add just enough dressing to coat greens when mixed. Toss and enjoy!

  2. Your recipes look terrific! I’ve shared your blog with my vegan yoga teacher, who was very happy to learn of it1 BTW, I’ve made a salad very similar to this, but I make it warm. Heat some coconut oil over medium heat, add some pecans and saute until warm, add chopped apples (and/or pears), then add greens and toss until wilted. You could add the cranberries and use your dressing and I bet it would be great!
