Tomato Avocado Basil Dressing

I make it a point to eat a lot of leafy greens every day, so it’s great when my salad dressing promotes good health as well. Avocados are a great source of Omega-3 fatty acids and they contain 3 times the potassium found in bananas. Try this super easy and delicious oil-free salad dressing on your favorite greens today!

1 vine-ripened tomato, cut into quarters
1/2 ripe avocado
1/4 cup fresh basil
Juice of 2 lemons
Sea salt to taste

Combine all ingredients in a blender and blend until smooth and creamy; adjust salt to taste.

Toss with dark leafy greens for a healthy, oil-free, and delicious salad!

Per serving: 35 calories (23 from fat), 2.5g total fat, 0g saturated fat, 0mg cholesterol, 41mg sodium, 3.6g total carbohydrate (1.5g dietary fiber, 1g sugar), .6g protein,  5% vitamin A, 19% vitamin C, 1% calcium, 1% iron

  3. Sounds great! I was going to mak it for my salad for lunch tomorrow. How long will it last? Can I make it tonight then put the leftovers in the fridge or is it better to make it right befor you eat it?

    • We keep it in the fridge for about a week (if it lasts that long!) I actually think it tastes better the next day; it gives the flavors a chance to come together.
