I’ve tried every kind of vegan and gluten-free pancake mix and recipe I could get my hands on. None of them are as good, or as amazingly simple, as these!
One of the reasons I love these so much is I don’t have to stock my pantry with 10 kinds of gluten-free flour. There are only 4 simple ingredients, no added sugars or baking powders required. I can feel good about the ingredients I use.
These are my go-to recovery meal after a long Saturday run. They’re packed with protein, carbs, and deliciousness.
Fire up your griddle, put on a pot of coffee, and enjoy the best vegan and gluten-free pancakes you’ll ever taste!
4-Ingredient Protein Pancakes – Vegan & Gluten-Free
1 cup gluten-free rolled oats
1 banana
2 scoops Arbonne Vanilla Protein Powder (or other vegan protein powder)
1 cup almond milk (or other plant-based milk)
Add all ingredients to blender and blend into a smooth batter. Pour the batter onto hot griddle and cook for around 3 minutes per side. I recommend adding some Cherry Almond Granola to your cakes while they’re cooking.
Makes around 5 medium-sized pancakes.
