We LOVE granola! Seriously, we eat it every day. I mix it into hot oatmeal, I use it to make amazing banana-granola pancakes, the kids like it as cold cereal with almond milk, we even eat it dry as a snack. The problem is that really good quality granola is expensive. So, we set out to make the best granola ever ourselves! We buy quality organic ingredients, mostly in bulk, so we know we’re making something delicious, healthy, and we’re saving money too!
This home-made granola is as good (if not better) than the best granola we’ve been able to find in stores, and it’s so simple to prepare! Better enjoy it while you can though – it disappears quickly!
2 cups old-fashioned oats
1/2 cup vegan brown sugar, packed
3/4 cup shredded coconut, unsweetened
1/2 cup almonds, slivered
1/2 cup dried cherries, chopped
1/4 cup roasted sunflower seeds, unsalted
1/4 cup pumpkin seeds
1/4 cup coconut oil
1 tsp pure vanilla extract
1/2 cup water
Preheat oven to 275°
Combine all dry ingredients in a large bowl.
Warm coconut oil in small sauce pan over low heat to melt, making sure not to overheat. Stir in water and vanilla.
Add coconut oil mixture to dry ingredients and stir to combine thoroughly.
Pour mixture onto a lightly greased 11 x 17 baking sheet (I like to use Silpat) and spread evenly.
Place in middle rack of oven and cook for 25 minutes.
Remove from oven and stir.
Return to oven and cook 15 minutes longer.
Servings: 12 (about 1/2 cup per serving)
